Curry Quinoa, Lentils, and Kale

Ingredients:

1 C. quinoa, rinsed

1 C. lentils (any variety), rinsed

½ bunch of kale, chopped

¼ red onion, diced

2 cloves garlic, chopped finely

1 T powdered yellow curry

2 C. H2O

Salt and pepper to taste

Instructions:

Put quinoa, lentils, kale, red onion, garlic, and water in a medium sized sauce pan. Add curry powder, salt, and pepper. Heat on high and bring to a boil, stirring occasionally. Turn heat down, cover, and simmer until all water is absorbed- about 20 minutes. If quinoa and lentils are not done, add more water and continue to simmer until the lentils are tender.

Makes about 5 cups cooked, serves 4-5 people
